Colorful and Clean Chicken

 

Are you looking to clean up your diet? Well you are in luck, because this meal is the perfect dish to kickstart your lifestyle change!

What you will need:
– Organic Chicken Breast
– 3 Bell Peppers (any color)
– 1 Whole White Onion
– Broccoli
– Olive Oil
– Pepper
– Cayenne Pepper
– 1 Lemon
– 1 Avocado
– Skewers

Preparation is key!

Whether you are cooking dinner for two or providing the main course at a neighborhood BBQ, it is always a good idea to prep your food before hand.
This meal is the perfect addition to any party, meal, or gathering. Color coordinate your vegetables, switch up your meats, and really learn how to make this clean dish your own.

When prepping these skewers I really kept things simple.
1. Dice the chicken into 1 1/2′ – 2′ cubes.
2. Flavor your chicken with olive oil, pepper, and cayenne pepper.
(Place chicken aside while you prep your vegetables.)
3. Rinse your vegetables and chop up the bell peppers and onion into 1 1/2′- 2′ slices and separate the broccoli into 2 inch crowns.
(Try to remember that when the food cooks it will shrink, so don’t so afraid to leave some pieces a little big.)
4. Grab whatever kind of skewers you are using (I used wooden ones) and begin to slide your chicken, peppers, broccoli, and onions on in any pattern that you would like!

Cooking options:
I absolutely love the summer time because I am able to go outside and grill my food! In my opinion, grilling is the best and healthiest way to cook your meats. Although I do love the grill, almost every single recipe that I post can be done either on a grill or in an oven!

Grill Instructions

Turn your grill onto a medium/high setting (350 degrees) and carefully place each skewer onto the grill. Allow each side of the skewer to cook for at least 5-7 minutes. The most important thing to remember is that the chicken cooks all the way through. Once the chicken is cooked then you are done!

Oven Instructions
Preheat your oven to 350-400 degrees and place your skewers onto a cookie sheet/tray. Because you are baking your food it will cause the vegetables to be softer and weighed down. Do not worry though because they will still be delicious!
Allow the skewers to cook for 10-15 minutes, or until the chicken is cooked all the way through!

SIDE DISH
On the side I mashed up one avocado and used it as a “dip” for my chicken and vegetables. Avocado is full of healthy fats that actually help your body absorb more nutrients from the other foods that you are eating. Not to mention it is a CLEAN alternative “add-on” to any meal.

Finish your plate off with a squeeze of lemon juice on top to add an extra splash of flavor!
