Tilapia and Eggplant Dinner

 

What you need: 

1 Eggplant

1 Whole White Onion

1 Lemon

Tilapia

Fresh Cilantro

Red Pepper (Cayenne)

Olive Oil

Salt

Pepper

Any hot sauce

(I used Handlebar Hot Sauce found at a local famers market)

How to:

Preheat the over to a low broil setting.

While the oven is heating place a skillet on your stove top at medium heat.

Coat each slice of eggplant with olive oil, lemon juice, salt, pepper, and red pepper.

Top it off with freshly cut onions and cilantro for taste.

Allow the slices to cook until darkened on each side.

When the oven is heated, place your tilapia onto a pan that is covered in foil. Season the fish with olive oil, lemon juice, salt, pepper, and a little splash of hot sauce.

Top it off with onions and cilantro.

The fish should take no more than 9 minutes to cook all the way through!

Why eat white fish?

White fish is known to be a good source of dietary omega-3 fatty acids. These fatty acids are the healthy types of fat that actually help lower blood fat levels, and prevent stiffness and joint pain.
