Here is a little twist to my previous shrimp dish! Refer back to my last post and make the shrimp dish the same way.
While your shrimp and vegetables are cooking cut the top off of any color bell pepper you like. Be sure to take the stem off and take the seeds out.
After lightly coating the pepper in olive/coconut oil place the pepper face down onto a cookie sheet. Allow pepper to cook in 400 degrees for 10 minutes.
After 10 minutes take the pepper out and begin to stuff your shrimp and rice mixture into the hallow pepper until it is filled.
Lastly, allow the stuffed pepper to bake for another 10 minutes!
